Fudgy Walnut and Speculoos Brownies
Ingredients:
3 eggs
100g flour
150g butter
200g dark chocolate
150g caster sugar
1 tsp baking powder
100g walnut halves
3 tbsp speculoos spread
Butter or baking paper for the pan
Directions:
Melt the dark chocolate and butter together in a double boiler, stirring gently until smooth and glossy. Be careful not to overheat the mixture.
Remove the pan from the double boiler and add the caster sugar. Mix thoroughly until well combined.
Add the eggs one at a time, mixing immediately after each addition to obtain a smooth, homogeneous batter.
Then add the flour and baking powder. Mix gently but thoroughly to obtain a lump-free batter.
Break the walnuts into chunks, more or less coarse depending on your preference. Incorporate them into the batter along with the speculoos spread. Mix gently to evenly distribute the ingredients while maintaining a rich texture.
Pour the mixture into a greased or parchment-lined baking pan. Smooth the surface lightly with a spatula.
Bake in a preheated oven at 180°C (350°F) for 20 to 30 minutes, depending on the desired texture. For a fudgy brownie, keep a close eye on it while baking: the center should remain slightly moist.
Let it cool completely in the pan before cutting into squares for best results.
