Spicy Dill Pickle Sauce – A Flavorful Kick in Every Drop!

This recipe yields about 250-300 ml of sauce.

Ingredients:

  • 150 g dill pickles (gherkins), well-drained and finely diced or minced
  • 60 ml (¼ cup) dill pickle juice (from the jar of pickles)
  • 120 g (½ cup) mayonnaise (or crème fraîche / Greek yogurt for a lighter version)
  • 1-2 tablespoons fresh dill, finely chopped (or 1 teaspoon dried dill)
  • 1-2 cloves garlic, minced or pressed
  • ½ teaspoon onion powder
  • ½ teaspoon cayenne pepper (or more, depending on desired spiciness)
  • ¼ teaspoon smoked paprika (optional, for added depth)
  • 1-2 teaspoons Sriracha sauce or another hot chili sauce (depending on desired spiciness)
  • Salt and freshly ground black pepper to taste

Equipment:

  • Blender, immersion blender, or food processor (for a smoother sauce)
  • Cutting board and knife (if you’re not blending the pickles)
  • Mixing bowl
  • Spatula or spoon

Instructions:

  1. Prepare the Pickles:
    • Drain the dill pickles well. For a finer sauce, you can either chop them very finely or pulse them in a blender with a little pickle juice until they reach your desired consistency (don’t overmix if you want some texture). If you prefer a completely smooth sauce, blend until pureed.

  1. Mix All Ingredients:
    • Place the prepared dill pickles (chopped or pureed) into a medium-sized bowl.
    • Add the dill pickle juice, mayonnaise (or your chosen base), fresh dill, minced garlic, onion powder, cayenne pepper, smoked paprika (if using), and Sriracha sauce.
    • Mix all ingredients thoroughly with a spatula or whisk until everything is well combined and forms a creamy consistency.
  2. Taste and Adjust:
    • Taste the sauce and season with salt and pepper to your liking.
    • If you desire more heat, add a little more cayenne pepper or chili sauce.
    • If you prefer a thinner consistency, add a bit more pickle juice or a splash of water. For a thicker sauce, you can add another teaspoon of mayonnaise.
  3. Chill and Let Flavors Mingle:
    • Cover the bowl and refrigerate the sauce for at least 30 minutes (preferably 1-2 hours or overnight). This allows the flavors to fully develop and the sauce to thicken slightly.
