Chocolate Chip Alfajores
🧾 Ingredients
For the cookies:
200g butter (at room temperature)
120g sugar
1 egg
Vanilla extract
300g self-rising flour
150g cornstarch
Pinch of salt
150g chocolate chips
For the filling:
400g dulce de leche (confectioner’s style)
👩🍳 Preparation
Cream the butter and sugar together until light and fluffy.
Add the egg and vanilla extract, and mix well.
Incorporate the sifted dry ingredients (flour, cornstarch, and salt).
Add the chocolate chips and combine everything gently, without overworking the dough.
Refrigerate the dough for 30 minutes.
Roll out the dough (about 5-7 mm thick) and cut out circles.
Place them on a baking sheet lined with parchment paper. Bake at 180°C (350°F) for 10-12 minutes (until lightly golden).
Let cool completely.
Assemble the alfajores: sandwich two cookies together with plenty of dulce de leche in the middle.
•You can roll the edges in shredded coconut if you like.
•For a more “premium” touch, dip them in melted chocolate 🍫
•A firm, thick dulce de leche is key to keeping them from falling apart.
