Light Dressing for Salads and Raw Vegetables
Ingredients:
1 plain yogurt (or 0% fat Greek yogurt for a creamier version)
1 clove of garlic
Pepper
Salt
1 tablespoon of mustard
1 tablespoon of lemon juice
1 tablespoon of olive oil
1 teaspoon of vinegar (cider or white balsamic)
1 tablespoon of chopped fresh chives or parsley
Directions:
In a bowl, pour the plain yogurt and mix until smooth.
Add the mustard and mix thoroughly until well combined.
Stir in the lemon juice and vinegar, then mix again.
Drizzle in the olive oil while stirring to emulsify the dressing.
Peel and finely chop the garlic clove if using, then add it to the mixture.
Add the chopped fresh herbs (chives or parsley) for freshness.
Season with salt and pepper to taste.
Stir one last time until you have a smooth, creamy sauce.
Taste and adjust the seasoning if necessary (more lemon juice for acidity, or a little water for a thinner consistency).
Serve immediately or let it chill in the refrigerator for 10 to 15 minutes to allow the flavors to develop.
